Peanut Butter Cookies

Have you ever just sunk your teeth into a cookie and thought, “this is the one…the most delicious peanut butter cookie EVER!” Well be ready, because this peanut butter cookie does just that. I’m not kidding, I think these are the softest most flavorful peanut butter cookies I have ever treated my mouth to.

I think everyone gets in the mood for baking once the weather outside starts to cool down. But I must admit that I can find an excuse for baking cookies all year long. I just love cookies. These however are a perfect companion for hot chocolate or mocha…DELICIOUS!!!

Go ahead and whip up a batch…they are fast…they are easy…they are SO good!

Ingredients:

…I am a huge fan of Aldi Grocery Store…all of my ingredients come from there… the exception…if they do not carry something I need, which is not very often. I think their food is fresh and products are exceptional…which makes my food oh so good…

  • 1/2 c. butter-soft
  • 3/4 c. peanut butter
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 large egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 1/3 c. all purpose flour

Instructions:

  1. Put the butter in your stand mixer with the paddle attachment and turn on low for 2 minutes.
  2. Add the peanut butter and mix until butter & peanut butter are combined.
  3. Add the sugar & brown sugar…mix for 2 minutes.
  4. Add the egg and vanilla…continuing mixing.
  5. Add baking soda & baking powder.
  6. Add the flour mix until combined.
  7. Your dough is now ready to scoop into cookie balls and place in the refrigerator for at least an hour before baking.
  8. Remove from the refrigerator…roll them in sugar…place on the lined cookie tray & make the marks with a fork.
  9. Bake in a 375 degree oven for 10-12 minutes

At this point after I make the dough…I usually freeze half of the dough balls. I simply press the down by placing parchment on top of them then another baking pan and press lightly to flatten them a little before freezing them. I place them in a freezer bag and into the freezer. I do thaw them for about 10 minutes prior to baking.
